 “The 2006 Chablis 1er Cru Les Lys is showing beautifully, offering up inviting aromas of pear, honeycomb, mandarin oil, warm bread and oyster shell. Medium to full-bodied, satiny and incisive, with an enveloping core of fruit, racy acids and a long, saline finish, it’s fleshy but controlled, with more texture than the Côte de Léchet and more structure than the Vaillons.”

The Elisabetta Foradori’s wines occupy a singular place in the world of wine.  She’s a natural wine icon whose wines don’t taste Natural—just classic and pure.  Likewise, her adventurous and questioning spirit has lead her down a number of different (now trendy) roads long before anyone else in her region, including the use of amphora and long skin contact on white (and grey) grapes.  None of her wines taste “experimental” though—there’s an effortless grace that suffuses everything coming out of her cellar.

There are few wineries who’s vineyards help pioneer the creation of a sub-appellation. In Oregon the Seven Springs, Temperance Hill, Abbey Ridge & Maresh Estate vineyards could all be crowned. While having a much more established history with winemaking there are still appellations still being created, especially in the high elevation areas near the coast that were previously considered too cold and wet for wine production.

Salubrious Salvestrin:
Historic Napa Cabernet 

Dr. Crane Vineyard is one of Napa’s heritage vineyards, with its first planting dating to the 1920’s. Replanted to Cabernet Sauvignon, Cabernet Franc and Petit Verdot in the late 90’s the site is famed for the high portions of gravel throughout the 21 planted acres. Soils are comprised of a thin layer of loam before giving way to bedrock, with the site originally housing a quarry in the 18th century.
