Stellar Schaller

Schaller is in the process of converting to organic farming methods with the majority of their fermentations taking place in steel and used oak in the case of Premier and Grand Cru bottlings. If that wasn’t enough they also do a champagne-method sparkling under the Cremant de Bourgone appellation, comprised of a blend of Chardonnay, Aligote and Pinot Noir. With the characteristic high acidity and tertiary salinity of Chablis juxtaposed against a delightfully refreshing Bosc pear and hazelnut character   

Trevor: A perfect Champagne-Alternative that’s refreshing and light with similar notes to classically styled champagnes.
