What are you drinking on the 31st? I’ll be on a plane when midnight strikes, but a bottle of this beauty will be in my bag to crack once we land in New York. Ulysse Collin makes some thrilling wines, and this may very well be my favorite of all his bubblies. Anselme Selosse was his mentor, but these wines don’t need name-dropping to command attention. (Okay, perhaps that was a name-drop.)

You wouldn’t know it based upon the black-as-night bottle, but the wine itself is a rosy-rusty copper color; it’s as fresh as it is rich and as complex as it is playful. Native yeast fermentation, very little dosage, and organic farming help this phenomenal bottle achieve the peak of clarity and quality. Assemble a few people who mean a lot to you, and pour a few glasses to the brim. A very Happy New Year indeed!

Peter Liem: “Ledru owns five hectares in Ambonnay and one in Bouzy, with a total of 30 different parcels. All of the vineyards are planted with cover crops and tilled, and she uses no herbicides or insecticides, seeking to work her vines as naturally as possible. The same sensibility extends to the cellar, where she makes the wines without filtration, without cold-stabilization and without any sulfur at disgorgement. Fermentation is all in stainless steel and enameled steel tanks, for their neutrality, and the malolactic is allowed for all wines. “I do the malo because for me it’s natural,” she says. The wines are aged for a respectably long time on their lees, averaging about three years for the brut sans année and five years for the vintage wines, and all disgorgement is done by hand, in a fashion not dissimilar to how it might have been done two or three generations ago. “Collin’s NV (2008) Extra Brut Blanc de Blancs Les Roises is a new wine from a parcel that he has regained control over after a period of selling the grapes. Here the deep, clay-rich soils yield a Chardonnay of extraordinary depth, breadth and volume. Juicy apricots, dried pears, honey, spices, almonds, orange, dried flowers and savory herbs all take shape as this full-bodied, voluptuous Champagne shows off its inimitable personality. Despite its richness, the 2008 boasts stunning depth and fabulous overall balance. Power and elegance have rarely been this compelling. What a gorgeous wine! Dosage was just 0.85 grams per liter. This bottle was disgorged on March 5, 2012. Anticipated maturity: 2012-2018. Olivier Collin’s estate is practically in the middle of nowhere, but it is well worth a visit. “Les Pierrières,” a vineyard near Congy, faces south/southeast. The topsoil is clay-limestone with only 10-50 cm depth. Subsoil or bedrock is composed of soft chalk and black flint carbonate (onyx). The combination of these two elements is rare in Champagne and contributes to the singularity of the Ulysse Collin champagnes. The vines are seleccion massale with an average age of 35 years. Plowing of the vineyard began in 2003 in order to encourage the growth of microbial life. AB certified organic compost is used when needed. Each row in the vineyard alternates between natural grass and tilled soil. Protection of plant life is mixed, both conventional and organic. No herbicide is applied in the vineyard. Alcoholic fermentation occurs naturally in small oak barrels over 6-8 months. The barrel aging takes on average 12 months. The wine underwent no filtration. Each year, an average of 12,000 bottles is produces from this plot. The aging on lees in the bottle has increased gradually from 24 to 36 months and contributes to the nose, and enhances the wine’s complexity and fullness of flavor. Only Extra Brut (little or no dosage, depending on the vintage) is made from Les Pierrières in order to maintain the most accurate expression of the terroir. The mention of the vintage and the disgorgement date is shown on the label.”

“The 2004 Brunello di Montalcino is awesome. This finessed, regal Brunello flows onto the palate with seamless layers of perfumed fruit framed by silky, finessed tannins. The wine remains extremely primary at this stage, and its full range of aromas and flavors have yet to emerge, but the sheer pedigree of this Brunello is unmistakable. The elegant, refined finish lasts an eternity, and subtle notes of menthol, spices, licorice and leather add final notes of complexity. The estate’s 2004 Brunello is a wine to buy and bury in the deepest corner of the cellar. Brunello is never inexpensive, but this is the real deal, and in relative terms, it is one of the world’s great values in fine, cellar worthy wine. Incredibly, there are 18,000+ cases of the 2004 Brunello, so it should be fairly easy to source in various markets. “Upped to a Bolgheri status (previously this wine was identified as a Toscana IGT), the 2012 Bolgheri Magari is simply delightful. This vintage shows extra heft and dimension that allows the wine to spread smoothly over the palate. Merlot is blended with Cabernets Franc and Sauvignon, and the taste profile in the 2012 vintage definitely favors the Merlot component. Soft cherry and dark berry segue to spice and moist tobacco. The structure of the two Cabernet varieties shows in the mouth where the wine is elegant and tight. It needs more time for bottle evolution. Angelo Gaja’s Ca’Marcanda estate has hit its stride with this latest set of wines. His management of the 2011 heat is impressive, resulting in wines with power and finesse. “If the Planetes was impressive, wait for the 2012 Nit de Nin, which is a similar wine but at two levels of intensity, depth and elegance above. It’s also a single-vineyard wine from a very old plot in Porrera in the Mas d’en Caçador vineyard at some 500 meters altitude on an impressive slope planted with very old vines on slate soils. It’s approximately 60% Garnacha Peluda (which is a different strain producing lighter-colored wines with higher acidity than the regular Garnacha) and the rest Cariñena. The wine is pure, perfumed, intoxicating even, floral and spicy, intense and captivating. The palate is highly refined, with pure flavors, great freshness, completely focused, nothing blurry at all in there, generous but fine at the same time. It ends very tasty, with a saline minerality. I had the chance to visit the vineyard on my last night in Priorat, and when you see it you understand that it HAS to produce great wine. Simply superb. Drink or keep. 4,000 bottles were filled in March 2014.” WA

It has a beautiful floral nose of violets and lilies, with showy aromas of blood orange peel, wild berries and oriental spices in a Vosne-Romanée way, very Burgundian overall and truly captivating. The palate is ultra-sleek, silky with very refined tannins and a subtle minerality that adds to the freshness and makes the wine very focused and precise. This is so different from previous vintages, so much more elegant and focused, pure and elegant. This should age in bottle nicely, but it will be very difficult to resist. There is plenty of backbone here, but it is very focused and harmonious with superb tension on the finish. I love its mid-palate density, and while it has a lot of tannins, they’re nicely integrated into the body of the wine. Give it 2-3 years in the cellar and enjoy bottles through 2033.
