The Champagnes of Christophe Mignon
Christophe Mignon splits the difference in terroir between two vineyards, a cooler site in Le Breuil that contributes acidity and structure, and a chalkier site in Festigny that offers more fruit and concentration. To quote Peter Liem in his excellent book, Champagne, Mignon is a “dedicated and conscientious viticulturalist, yet while much of his work might be interpreted as organic or biodynamic, he refuses to adhere to any standardized systems required for certification.”
