What are you drinking on the 31st? I’ll be on a plane when midnight strikes, but a bottle of this beauty will be in my bag to crack once we land in New York. Ulysse Collin makes some thrilling wines, and this may very well be my favorite of all his bubblies. Anselme Selosse was his mentor, but these wines don’t need name-dropping to command attention. (Okay, perhaps that was a name-drop.)

You wouldn’t know it based upon the black-as-night bottle, but the wine itself is a rosy-rusty copper color; it’s as fresh as it is rich and as complex as it is playful.
