Founded by Pablo Calatayud in 1995, Cellar Del Roure has made a name for itself by bucking tradition. This is no better illustrated than by Safra, made with the indigenous varietal Mando, using traditional lagar and amphorae during fermentation to preserve the natural structure and earthy flavors.
