The Champagnes of Christophe Mignon
Christophe Mignon splits the difference in terroir between two vineyards, a cooler site in Le Breuil that contributes acidity and structure, and a chalkier site in Festigny that offers more fruit and concentration. To quote Peter Liem in his excellent book, Champagne, Mignon is a “dedicated and conscientious viticulturalist, yet while much of his work might be interpreted as organic or biodynamic, he refuses to adhere to any standardized systems required for certification.”
Under Mignon’s guidance, the wines show dramatic mineral notes with depth and tension. These are true works of art; ones you’ll be pleased to share.

While other producers bottles as Les Picasses, the Raffault’s is viewed as the benchmark expression of this famous terroir. A big reason of that is the family’s patience in releasing the wines when they deem them ready to drink: on average six to seven years after it was harvested.”

If you find yourself in Eastern Oregon, you might be surprised to find one of the hottest cult winemakers of Walla Walla: Christophe Baron. This Champagnois-turned-Oregonian is the man behind some of Walla Walla Valley’s finest wines that are nearly impossible to source.
Though mostly associated with Washington state, a quirk in geography means the bottom smidge of this Valley is in Oregon. That smidge contains a subregion of the Valley: The Rocks District of Milton-Freewater. And Baron more or less put it on the map.
