Cavallotto is a top tier, old school producer of Barolo.  Their wines are impressively age-worthy yet somehow manage to stay at the edges of the mainstream Barolo drinker. That is something we’d like to change.  These are incredibly expressive wines and are very true to their vineyard terroirs.
 
Antoni Galloni describes them as “made in a style that offers the fruit density of contemporary Barolos with the structural underpinnings that are found in more traditionally made wines.”  We agree—these are special wines and deserve a (major) place in your cellar.

“Vinification: fermented with indigenous yeasts, macerated with submerged cap for 20-35 days. Ageing: Traditional in Slavonian Oak Casks for 15-18 months. Bottle Ageing: 6 months before release into the market. Organoleptic Characteristics: this wine is made entirely from Nebbiolo grapes, usually coming from the youngest vines. Excellent structure with typical aromas of the Bricco Boschis: red fruits and flowers, with spices, all open and intense. Great aging potential.”

“A certified organic wine, the Cavallotto 2016 Barolo Riserva Bricco Boschis Vigna San Giuseppe is born in vineyards on a beautiful ridge in Castiglione Falletto with wide views of both the sunrise and the sunset. From this magical site at the heart of the Barolo appellation comes a wine that represents the very best of vintage and territory. Dark fruit, dried cherry, wild plum, rose and iron ore meet a perfect intersection that gives this Barolo a beautiful sense of balance and inner energy. Fruit comes from a 2.4-hectare plot with southwest-facing vines that are 60 years old. After destemming, the grapes see 28 days of skin contact (semi-submerged caps) in steel tanks. Secondary fermentation occurs in cement in the spring following the harvest. The wine is aged in Slavonian oak for 60 months. Production is 8,794 bottles and other larger formats.”

At first swirl, aromatics of honeydew, watermelon and pineapple spring forward from the glass with floral notes of jasmine and honeysuckle. If you can manage to keep it in the glass for a couple of hours of slow observation and drinking, the wine will take you on a rollercoaster of highs that seem only to climber higher with every passing minute. Acidity? More than you can imagine but somehow it presents itself gently on the finish after a somewhat overwhelming initial attack from the first sip.”
