The Kimmeridgian escarpment of Fourchaume is reputed to produce some of the best Chablis wines and the South West exposure of the vines means that they bask in the warm afternoon sun. Vinified in stainless steel tanks (75%) to preserve the minerality and freshness, and in oak barrels (25%) of 228-litres so as to add more complex notes, this wine will continue to improve for the next 15 years or so. Serve at 14-15°C, this wine will benefit from being decanted 15 minutes before serving to allow the aromas to develop.  The perfect partner for turbot or a grilled côte de veau.”

“The assemblage of the 2006 Louis XV Brut Millésimé is about the same as the 1995 and 1996—composed of 50/50 Pinot Noir and Chardonnay, all from grand cru villages. The only difference is that the Chardonnay from Le Mesnil-sur-Oger (10% of the assemblage) spent 12 months in oak barrels. Disgorged in January 2017 (dosage: six grams per liter), the 2006 has a golden color and opens with a deep, ripe, elegant and vinous bouquet with toasty and chalky lemon and fresh white fruit flavors. On the palate, this is an intense, round, fresh and complex Louis XV with great purity and finesse. The wine opens on the palate like a soufflé, coating the whole palate without any pressure or weight—gorgeous! This is a delicate and fresh yet well-structured and persistent Louis XV whose intense and long but weightless finish reveals lovely, almost juicy fruit concentration with perfectly integrated freshness and lasting minerality that seems to give additional structure. The 2006 shows a lot of Chardonnay features right now and drinks perfectly today; however, it can be kept under perfect conditions for decades. Just keep it in the box, because the bottle is white and nothing makes a Champagne age faster than exposure to daylight. (Tasted in November 2017 from Lot LL15067017BT.)-SR”

“The straw-yellow/white-golden colored 2008 Louis XV Brut Millésimé blends 50% Chardonnay (20 % from Avize, 15% from Oger and 15% from Mesnil) with 50% Pinot Noir (41.5% from Verzenay and 8.5% from Bouzy). Disgorged in January 2018 with a dosage of six grams per liter, the 2008 displays a clear, pure, fresh, chalky-tinged and vinous nose with lemon, white fruits, brioche, hazelnuts, white blossoms and some caramel notes. Pure, lean, fresh and elegant on the palate, with a lingering hazelnut flavor, this is a straight yet complex cuvée with grip and a long, well-structured and textured finish. This 2008 is still terribly fresh and should benefit from further bottle aging. For the moment, I am missing the mouth-filling generosity of the 2006 and 1995. Mind that this is the first vintage of de Venoge’s prestigious Louis XV where the base wines didn’t undergo malolactic fermentation! Total production: 10,326 bottles. Tasted October 2018.”

Disgorged in spring 2021, while its quality is apparent, this is predictably a little introverted out of the gates, so I look forward to revisiting it later this year.”

 “The 2017 Flaccianello della Pieve is fabulous. Dark, sensual and enveloping, the 2017 captures the essence of the house style in its textural richness and baritone inflections. Black cherry, plum, spice, new leather, licorice and chocolate infuse the 2017 with tremendous richness. The 2017 spent 18 months in barrique followed by 6 months in cask, the same aging regime as the Vigna del Sorbo, but with a bit more new oak. That approach worked very well, as the Flaccianello stands out for its exceptional textural elegance and finesse. It is a positively stellar wine.”

 “The 2019 Chardonnay Collezione Privata is a real achievement, especially in its natural ability to showcase varietal purity and textural importance in equal measure. The wine is fermented in oak and spends some time on the fine lees with frequent stirring. Aromas of poached pear, honey and stone fruit segue to a glossy note of latex or natural rubber that I personally find very attractive. The bouquet shows very light toast with some sweet nuttiness and almond paste. Drying mineral tones add a touch of linearity and extra elegance on the close.”

Often Singerriedl is the source of his top Riesling, but in 2018, I prefer the Steinporz, which grows on weathered gneiss soils. The stone-fruits nose is rich and opulent without being blowsy. Creamy, very ripe, it’s a touch broad but that ripeness is cut by a stony minerality. Resplendent fruit, fine depth and impressive length. Drinking Window 2020 – 2035.”

“Vinified in a new, untoasted 900-liter oak vat, the 2019 Ried Pfaffenberg Alte Reben Grüner Veltliner was only bottled in spring this year. The intensely citrus-colored wine shows a flinty, precise, fine and fresh bouquet with ripe stone fruit aromas and spices of crunchy crystalline stones. Creamy textured, ripe, lush and very elegant, with some attractive oak notes but fine tannins, this is a sensual, well-balanced and perfectly round Pfaffenberg that has to be marketed as Kremstal Reserve because the oak influence was too dominant for the DAC tasters in Krems. There is 14.5% alcohol, which you don’t feel due to the mineral freshness and elegance. Tasted at the domain in June 2021.”

“Founded in 1711 Ozeki roughly translates to “Master” in Japan’s national sport: Sumō and is the highest rank one can achieve without regularly competing. Based in Hyogo Prefecture the house’s biggest asset is their access to the regions legendary mineral water, called miyamizu. A type of hard water containing a variety of minerals it’s one of the most prized in sake brewing for the additional flavors that are imparted due to the aforementioned mineral content. The flavors of the saké are taken to the next level with élevage in Yoshino cedar barrels (A Traditional medium dating back centuries when sake was sold by the cask).The resulting sake is highly mineral driven with notes of woodsy spice though not as aromatically dominant as incense cedar that many associate with the cultivar. Additional characteristics include lemon pith and honeydew melon with a fuller body and off dry level of sweetness.”

“Ama No To is A “Grower Saké” (Made by the farmers who grew the rice since the brewery’s founding in 1917) from Akita Prefecture, one of the most northerly areas of the Japanese Mainland. Translating to “Heaven’s Door” the name and magatama on the label is derived from Shinto scriptures regarding Amaterasu, the Sun Goddess and patron of rice cultivation. Tasting notes include dried chamomile, Arabian Jasmine, cloves, golden apple and white miso with an off dry level of sweetness and light body.”

Founded in 1886 and based in Osaka Prefecture, the brewery is considered a cult producer within Japan. Eschewing any additives or post-industrial practices the idea is to present a highly traditional sake as seen in centuries past. Slow fermented to dryness and bottled without any pasteurization, dilution or filtration the resulting Saké is earthy, weighty and loaded with umami with additional tasting notes of huángchá tea, grapefruit rind, and lily flower.”
