Nicolas Maillart: Staff Favorite Champagne


Nicolas Maillart’s family has a grape-growing tradition in Champagne that dates back to at least the 18th century -some documents indicate the family has been farming grapes since the 1500s. However it wasn’t until 2003 that Nicolas started his namesake winery. Based in the Montagne de Reims, the winery has a variety of excellent holdings in premier and grand cru villages, including an ungrafted parcel of Pinot Noir that informs their top wine.

I took a lot of Chardonnay up to the Olympic Peninsula last week to drink with halibut and king salmon—and Sandhi’s Zuni Café bottling was the clear standout. The wine was the favorite of a several-night stretch, even among $70 bottles of white Burgundy and top Oregon names, for its surprising complexity and impeccable balance. Bright and lively, it’s a distinctly costal version of California Chardonnay, with good acidity that will appeal to lovers of cool-climate wines.
