This Rosé is made using the direct press method with the whole berries entering the pressoir. The musts ferment in temperature-controlled cuves (85%) as well as a small percentage in older barrels (15%). The fermentation occurs over three weeks. The wines is bottled in the spring of the following year.”

It is made from 100% certified organic Cabernet Franc grapes planted on alluvial sand and gravel soils of the former Loire river bed. Raffault picks the fruit dedicated to the Rosé at the start of his harvest period, when it typically has attained one degree less in sugar than that of the Chinon Les Galuches, which is picked next…The color is light and bright cherry-red (…the color of the 2023 was more intense…), the exact shade Rodolphe aimed for. Aromas and flavors of red currants, raspberry and pomegranate, citrus and cherry fruit emanate from the glass. The finish is long, fresh and succulent.”

“Returning in 2018 after 2017 was wiped out by frosts, this is an intense, wild 2018 Buisson Renard, like an untamed head of curls. In clear evidence at this early stage, it has floral and boxwood characters and a nutty oak-derived influence. There’s even an intriguing note of peppermint on the sinewy, lengthy finish. In a mid-weight, linear style with a firm, phenolic finish that almost requires knife and fork. This needs more time in bottle to shed its austere frame, but if you’re not in a hurry…”

“Size: Between 3.0-5.0 ha (7.41-12.35 ac) depending on the vintage. Variety: Chenin Blanc. Vine Age: Planted in 2017, 2019, and before depending on the vineyard. Terroir: From parcels in Brézé, Montsoreau and Saint-Cyr-En-Bourg, multiple soil types over chalky limestone bedrocks. Viticulture: Organic. Vinification: Pressed with whole clusters, fermented with a cultured yeast from the vineyards, 2-3-week fermentation and aging for 6-7 months in steel tanks, spontaneous and partial malolactic conversion (0-30%), SO2 added after malolactic conversion and before bottling (50-70 ppm total), filtered, stored in bottles for 3 months before release. Denoted as a “Vin de France” because in 2021, due to the frost damage, some organic purchased grapes went into the cuvée. They have maintained this designation to allow for flexibility in case future frost or climatic events affect their own grape production.”

As one of the top wines from this estate, this 100% Sauvignon Blanc hails from one of Pabiot’s best parcels in Les Marnes. The vineyard soils are Kimmeridgian (calcareous clay and limestone), imparting a dense minerality to this generous, long-aging white. This wine was aged in large, oak barrels (demi-muids) with no added sulfites.

“100% Melon de Bourgogne. The Clisson bottling comes from a 50-100-year-old section of vines in Pepière’s core vineyard near the winery in the cru of Clisson. Besides vine age, the distinguishing factor is the granite de Clisson, a very hard, compact form of granite. The very poor top soils are decomposed granite de Clisson with very little clay and a lot of quartz and mica over hard mother rock of granite de Clisson. The farming is certified-biodynamic. The hand-harvested bunches are direct-pressed and the juice settled naturally overnight. It is then fermented spontaneously with natural yeasts and aged on its lees for a minimum of 2 years in underground vats. The wine is bottled without fining or filtering.”

“Although it’s ungenerous on the nose, the 2022 Savennières Clos de la Hutte is tender and generous in the mouth, welcoming you in. There’s a cloud of gently handled fruit that embraces the palate, but it does so in an elegant and light-on-its-feet way. Texturally, it’s seamless and coats the mouth with fine texture. In terms of flavor, expect salty, briny notes and citrus tones alongside a touch of spice and nutty oak on the finish. This is a wine that seems to be able to take a deep, calming breath and become more complete.”

“The Saumur-Champigny “les Coudraies” is one of the estate’s single vineyard wines, made from a selection of the best parcels in this hillside vineyard. The wine is aged in mostly older casks for one year prior to bottling. The 2020 les Coudraies comes in at fourteen percent octane and offers up a simply gorgeous bouquet of red and black cherries, cigar wrapper, a touch of tree bark, a complex base of soil tones, juniper berry, a touch of cedar and a smoky topnote. On the palate the wine is pure, full-bodied and very elegant in profile, with a rock solid core of fruit, firm, buried tannins, excellent focus and grip and a long, complex and very, very promising finish. This is a great bottle of Saumur-Champigny in the making!”

“From three parcels with vines planted between 1955 and 1957 on silt and sand topsoil covering softer limestone bedrock. the 2019 Saumur Rouge is pure Cabernet Franc naturally fermented in tank for six months. The 2019 opens with a pure and refreshing as well as spicy/floral nose with dark fruit and fresh lemon aromas as well as stony notes and a nice reduction. Wonderfully untamed. On the palate, this is a medium-bodied, fresh and silky-textured Saumur with a stimulating salty, round and fruity finish. At this young age, charm is not its greatest talent, but with bottle age, this will be a terrific Saumur rouge for many dishes and opportunities. I like this tight and traditional, straightforward style that might be a bit unpleasant at this early stage but will reward those with patience. 13.5% alcohol”

“The Les Galuches vineyard is an ancient river bed of the Loire; the name being derived from the large presence of gravel. According to the records from the era, vines were already well established in this sector by the 1830s. The Cabernet Franc ripens very well in the domaine’s 10 hectare holding of this sand and gravel vineyard. Les Galuches is always among the first sites to be picked because the soil warms up quickly and drains very well. The wine rests for 6 months in 500 litre double-barriques. Always very aromatic, the Les Galuches bottling is noted for its bouquet of violets, followed by lush and supple dark berry/cherry fruit. Les Galuches vineyard has been organically farmed since 2016.”

“The intensely yellow colored 2020 Vouvray Le Mont Moelleux Première Trie is highly concentrated and complex on the nose that exhibits candied lemon zest and chutney aromas along with calcareous and walnut notes. Sweet (really sweet!) yet refined and elegant on the palate, this is a full-bodied, rich and generous yet piquant and firmly structured, greatly tensioned and salty 1ère Trie with pineapple flavors on the finely tannic and energetic, very sustainable finish. The 2020 has great aging potential, and I would never serve it too young. When will it really start to show its best? I don’t know, but you can’t go wrong to check the wine again after 10 years. Tasted as a final sample shortly before bottling in May 2021.”
